VEGETABLES TO COMPLEMENT THE MANTO

Heat peanut oil in pan.

Add a few match-sized strips of fresh ginger.

As they sizzle, add sliced strips of mushroom and dark fungus.

Stir in soy and 1 tsp. sugar.

In another pan, fry fresh tofu cakes. Slice them in the pan into small rectangular pieces.

Add soy and sugar.

Combine the mushroom and fungus with the tofu.

In another pay, fry asparagus tips and chopped salted vegetables (which may be bought in cans in a Chinese grocery). Add salt, not soy sauce, to them.*  Combine with above mixture. Serve hot.


*Fresh green vegetables should be cooked less so that they retain—their bright color and vitamins. If the vegetables are older they
