Vegetables For A Long Life

CHINESE SALAD

Carrots                Cabbage (Chinese or otherwise)
Celery                  Bean Thread
Cucumber            Parsley (Chinese)

Cut vegetables into very small match-sized pieces. Soak an equal amount (to that of cut vegetables) of bean
thread in warm water for ten minutes and drain.  Toss all together with:

1. Tsp. Dry Mustard    Peanut Oil
Soy Sauce                   Sesame Oil—a small amount adds to flavor

Fresh bean curd, bean sprouts (pour boiling water over them and let them sit for ten minutes), fresh peppers, and bean thread (prepare as above), with soy sauce, & sesame oil dressing also make  a delicious salad.

The first two of the three weeks were given over entirely to recitation of the Buddha's name, and the third to twenty hours a day of dhyana meditation.
