Vegetables For A Long Life

Here are some quick recipes for vegetarians of the Atomic Age:


Vegetarian Spaghetti (ala Julia)


1/4-lb. spaghetti noodles (cooked)        1/2-tbs. basil

1/8-tsp. Salt                             1/2-cup fresh chopped parsley

1/8-tsp. Pepper                           1/2-cup chopped walnuts

1/4-cup shredded Parmesan cheese          1 cup chopped black olives

2 cups tomato sauce*                      2 tbs. olive oil

1/3 cup chopped pimento                   1/2 tsp. oregano

*Or marinara sauce

Toss noodles with olive oil. Combine other ingredients and heat slowly for 15-30 minutes. Mix heated sauce with noodles. Sprinkle with Parmesan cheese. Serve with salad and French bread.




Tamale Pie


1 can Worthington vegetarian chili        1/4-tsp. chili powder

1/8 tsp. Cumin                            1 can cream corn

1/8-tsp. cayenne pepper                   1 can stewed tomatoes

1/3 cup milk                              1 box Jiffy corn muffin 

Pre—heat oven to 400 degrees. Mix chili, corn, tomatoes together with spices in 2-qt. Pyrex or enamel oven-proof dish. Mix milk and muffin mix together. Spoon on top of combined ingredients to form a crust. Bake 60-70 minutes at 400 degrees.
